Pancakes! Delicious and free of the gluten!
Hot off the griddle. The recipe is a hybrid; I try to stay away from dairy and gluten. It’s made with brown rice flour and any non-dairy milk. I also like to add coconut flour, almond flour, and/or shredded coconut (when I have these ingredients on hand) Around the holidays when soynog and coconut nog were available, I substituted these for the milk. I highly recommend. Very yummy! I like to put almond butter or peanut butter on top for a little extra protein and of course flavor. Only consume with real maple syrup and not that high fructose shit.
Let me paint you a picture of my ideal morning: Sunny outside. Dark roasted coffee brewed with fresh grounds. A clean apartment. Good music. A sewing project I know I’ll have time to get started on. Eating these pancakes on the celadon glazed plate shown in the photo, sitting on the feather pillow topped chair in my sun filled living room.

3/4 C milk – any kind really….I like using soy or almond or hemp milk because it adds the sweetness for you ; )
2 Tbsp vinegar – you can use white, I use apple cider (Braggs’s) and it’s great.
**Combine these two ingredients and let “sour” for 5 minutes.
1 C flour – okay, depending on what kind of flour you have, I like to add a little rice, a little coconut, a little almond, and also about 1/8 to 1/4 C flax seeds. Flax seeds really make a difference, I think they add that special touch…Add whatever ratio of flour, whatever kinds you have, to total 1 C.
[If you have shredded coconut, add about 1/4 C (depending on how coconutty you want them to be) or chopped nuts or banana or chocolate chips or oatmeal…..]
1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp sea salt
1 egg, 2 Tbsp oil or butter of some kind, 1/2 tsp vanilla extract (if you have it)
(For the non-baker; C=cup, tsp=teaspoon, Tbsp=tablespoon)
Combine everything. Stir. Pour onto hot oiled/buttered griddle. Serve anyway you want. Let me know what you think!
